Methi leaves, or dried fenugreek leaves, are used in Indian and Pakistani curries, adding a slightly bitter, nutty flavor to rich gravies like butter chicken or dal makhani. Crushed and sprinkled on top of dishes, they elevate the flavor profile. Methi leaves are also kneaded into dough for parathas or added to dals and vegetables.
